Nothing beats a good salad! Replacing lettuce with arugula increases the nutrient density and the accent with creamy goat cheese makes it the perfect compliment to any meal.

Arugula and Walnut Salad

6 cups arugula leaves, washed and dried well
1/2 cup walnuts, toasted in a dry skillet until fragrant, cooled, and chopped
2 ounces (about 1/2 cup) goat cheese, crumbled
balsamic vinegar salad dressing, to taste

  1. Place the arugula and walnuts in a large bowl.
  2. Drizzle the dressing over the salad and toss to coat.
  3. Sprinkle the cheese over the salad and toss once then serve immediately.
