Arugula and Walnut Salad
6 cups arugula leaves, washed and dried well
1/2 cup walnuts, toasted in a dry skillet until fragrant, cooled, and chopped
2 ounces (about 1/2 cup) goat cheese, crumbled
balsamic vinegar salad dressing, to taste
- Place the arugula and walnuts in a large bowl.
- Drizzle the dressing over the salad and toss to coat.
- Sprinkle the cheese over the salad and toss once then serve immediately.
