• 1 medium sweet potato, diced
  • 1 lb ground pork, chicken, or beef
  • 1 Tbsp of your favorite seasoning blend
  • ½ tsp sage
  • 1 large apple, cored and diced
  • 6 cups greens (spinach, kale, Swiss chard, mustard, collard, or beet greens)
  • 1-2 Tbsp water
  • 2-3 Tbsp avocado oil, for cooking
  1. In a large skillet, brown meat in about 1 tbsp oil. Sprinkle in the sage and half the seasoning.
  2. Add 1-2 Tbsp oil, then add sweet potatoes and apple. Sprinkle with salt and pepper and cook about 2 minutes uncovered, stirring to brown.
  3. Cover the skillet and lower heat to medium, cook another 3-5 minutes, stirring once midway, until soft.
  4. Using kitchen shears, roughly cut the greens into pieces.
  5. Uncover and add greens and water, then cover again and cook 1-2 minutes, uncover and sprinkle with remaining seasoning. Continue to cook another minute uncovered until the liquid has cooked out.
