In a large skillet, brown meat in about 1 tbsp oil. Sprinkle in the sage and half the seasoning.
Add 1-2 Tbsp oil, then add sweet potatoes and apple. Sprinkle with salt and pepper and cook about 2 minutes uncovered, stirring to brown.
Cover the skillet and lower heat to medium, cook another 3-5 minutes, stirring once midway, until soft.
Using kitchen shears, roughly cut the greens into pieces.
Uncover and add greens and water, then cover again and cook 1-2 minutes, uncover and sprinkle with remaining seasoning. Continue to cook another minute uncovered until the liquid has cooked out.
