
- 2 cup Medjool dates, pitted
- 2 cup raw cashews
- ½ cup cashew butter
- ½ tsp salt
- 2-4 Tbsp water
- Combine all ingredients in a food processor and puree until mixture starts to stick together. Add a little more water if necessary to help mixture come together.
- Pick up date mixture and using your hands work to squeeze it together into one big clump.
- Using a cookie scoop, scoop and roll into balls and refrigerate until ready to eat.
