• 1 whole cooked chicken, deboned and chopped
  • 1/2 cup mayonnaise (consider using safflower mayonnaise to avoid soy)
  • 1 lg onion, chopped
  • 1/2 bell pepper, chopped
  • 1-2 stalks celery, chopped
  • 1 bunch grapes, diced
  • 1/2 cup carrots, chopped
  • 1/4 cup honey
  • To Taste: red wine vinegar
  • 1/2 – 1 lime juice
  • 1/4 cup poppy seeds (optional)
  1. In a large bowl mix all ingredients.
  2. Chill for several hours before serving.
