- 1 whole cooked chicken, deboned and chopped
- 1/2 cup mayonnaise (consider using safflower mayonnaise to avoid soy)
- 1 lg onion, chopped
- 1/2 bell pepper, chopped
- 1-2 stalks celery, chopped
- 1 bunch grapes, diced
- 1/2 cup carrots, chopped
- 1/4 cup honey
- To Taste: red wine vinegar
- 1/2 – 1 lime juice
- 1/4 cup poppy seeds (optional)
- In a large bowl mix all ingredients.
- Chill for several hours before serving.
