Frozen Banana Treats
As the weather starts to warm up, and the day light is longer, we tend to spend more time outside. We’ve been playing around with these Frozen Banana Treats and the possibilities of combination are endless.
Here are two of our favorites. They both start with bananas that are peeled, broken into 1-2 inch chunks, and frozen. I will often get a bag of “day old” to bananas at the grocery store. They are usually browning, but it takes no time to peel and freeze them. It’s best to freeze them in a single layer on a plate or baking sheet, then if you have a bunch, you can put them in a ziptop bag.
Nutty Cocoa Monkey
- 3 bananas, peeled & frozen
- 1 Tbsp cocoa powder
- 1 Tbsp nut butter-peanut butter, almond butter, or sunflower seed butter
- 1 tsp vanilla extract
yields 4 servings
Pina Colada
- 3 bananas, peeled & frozen
- 1/2 cup canned coconut milk
- 1/2 cup pineapple chunks, drained
yields 5 servings
Instructions:
- Put all ingredients for 1 recipe into a high power blender or a food processor and pulse, then blend on medium speed.
- You will have to frequently scrape the sides down to allow it to mix appropriately.
- Once its all mixed well, it has a creamy texture and its ready to be enjoyed. You can either scoop out and enjoy as is, put it into the freezer for an “ice cream” consistency, or you can put it into a popsicle mold and enjoy as a popsicle. Whichever you decide to enjoy them, be sure to share with a friend.
I had saved the nutty cocoa monkey recipe when you posted it a while back on FB. I just made it last week and it was soooo delicious. It was my treat while the kids had ice cream and they wanted my dessert instead!!
