Chia seeds are all the rave now, for good reason. They are full of healthy fats and fiber. This recipe is one of my favorites because it’s simple and easy, but with all of the fiber and healthy fats it will keep you satisfied until the next meal. There are numerous variations to this recipe, so play with it and make new creations every time.
Fruity Chia Seed Pudding
3/4 cup (6 oz) canned coconut milk
1 cup 100% juice (any of your choosing, but I kind of like berry)
1/4 cup water
1/4 cup chia seed
The pudding is sweetened by juice, however additional sweetener is optional and can include stevia (a few drops) or maple syrup (1-2 tsp). For additional flavorings you can add vanilla extract, cinnamon, or fruit pieces.
1. Mix all of the ingredients together.
2. Pour into 2 separate 8 oz. containers.
3. Refrigerate for at least 2 hours or until the mixture gels.
4. Enjoy with fruit, nuts, other favorite toppings, or even plain!
Be warned, chia seeds tend to hideaway in the nooks and grooves of your teeth so don’t forget a quick spot check in the mirror!
I am doing Keto and fruit juice is not an option. More water or blueberries puréed?
Yes you can use pureed berries (blueberries, raspberries, strawberries, blackberries), or perhaps an unsweetened applesauce or any other type of pureed fruit.
