• 2 15oz cans black beans, drained and rinsed
  • ½ cup honey
  • ⅔ cup coconut oil, soft
  • 2 tsp vanilla extract
  • ½ cup monk fruit
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp salt
  • 4 large eggs
  • ¾ cup chocolate chips, divided
  • ¾ cup walnuts or pecans
  1. Preheat oven to 350°F. Grease a baking pan and set aside.
  2. Put beans, coconut oil, monk fruit and honey into the container of your high powered blender or food processor. Blend until well combined.
  3. Add cocoa powder, salt, baking powder, and vanilla and blend until smooth.
  4. Add in eggs and blend just until combined.
  5. Mix in ¾ cup chocolate chips and blend just until combined.
  6. Pour into greased baking pan and top with remaining chocolate chips.
  7. Bake for 35-45 minutes or until the top is set and brownies are just barely pulling away from the sides.
  8. Let cool before cutting.
