- 2 15oz cans black beans, drained and rinsed
- ½ cup honey
- ⅔ cup coconut oil, soft
- 2 tsp vanilla extract
- ½ cup monk fruit
- ½ cup cocoa powder
- 1 tsp baking powder
- ½ tsp salt
- 4 large eggs
- ¾ cup chocolate chips, divided
- ¾ cup walnuts or pecans
- Preheat
oven to 350°F.
Grease a baking pan and set aside.
- Put
beans, coconut oil, monk fruit and honey into the container of your high
powered blender or food processor. Blend until well combined.
- Add
cocoa powder, salt, baking powder, and vanilla and blend until smooth.
- Add
in eggs and blend just until combined.
- Mix
in ¾ cup chocolate chips and blend just until combined.
- Pour
into greased baking pan and top with remaining chocolate chips.
- Bake
for 35-45 minutes or until the top is set and brownies are just barely pulling
away from the sides.
- Let
cool before cutting.
